Nasi "Senang" – happy rice

Ingredients for 4 servings:

  • 700 g pork
  • 2 tbsp olive oil
  • 2 leeks, halved and sliced
  • 400 g pointed cabbage, cut into strips
  • 2 large onions, roughly chopped
  • 400 g beans, blanched
  • 1 tsp ginger powder
  • 200 ml beef broth
  • 3 tbsp Soy sauce, Indonesian (Ketjap Manis)
  • 2 tsp sambal oelek
  • 2 cloves garlic, finely chopped
  • 300 g rice

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Indonesian home cooking

Heat oil in a pan and fry the meat, remove from the pan and let cool slightly. Now sauté the onions, leek and garlic in the pan. In the meantime, cut the meat into small cubes. Once the onions are softened, stir in the meat. Add 200 ml beef stock and simmer for about 10 minutes. Add the cabbage to the pan and cook thoroughly. Then stir in the beans and ginger and cook, covered, for at least another 10 minutes. Season with ketjap manis and sambal oelek. Serve with boiled rice. This simple Indonesian dish is especially delicious when seasoned with ketjap manis, a sweet Indonesian soy sauce. It was brought to the Netherlands by Indonesians and is enjoyed there as a simple meal.
