Ingredients for 8 servings:

  • 250 g butter
  • 1 handful of nasturtium flowers
  • 3 leaves of cress (nasturtium)
  • Salt (to taste)

Place the flowers in a bowl of salted water for 10 minutes to expel any unwanted visitors. Whisk softened butter (which has been out of the refrigerator for about an hour) with a whisk (in a food processor). Add salt to taste. Stir in the chopped cress leaves, then add the flowers. Roll the butter into a sausage using aluminum foil and let it stiffen. It’s now ready to use; it can be sliced ​​and used like herb butter. It looks very decorative and tastes delicious. Nasturtiums are also high in vitamins (vitamin C is twice as high as in black currants, and provitamin A is also important).
