Neck Chop with Asparagus and Mashed Potatoes
The perfect neck chop with asparagus and mashed potatoes recipe with a picture and simple step-by-step instructions.
Neck chop:
- 330 g 2 Nackenkoteletts à 165 g
- Coarse sea salt from the mill
- Colorful pepper from the mill
- 1 tbsp Flour
- 1 Ei
- 1 tbsp Cooking cream
- 6 tbsp Breadcrumbs
- 8 tbsp Sunflower oil
- 2 tbsp Cooking cream

Asparagus:
- 800 g Asparagus (8 stalks)
- 1 tsp Salt
- 1 tsp Sugar
- 1 tbsp Butter
- 1 piece Lemon
Mashed potatoes:
- 600 g Potatoes
- 1 tsp Salt
- 1 tsp Turmeric
- 1 tbsp Butter
- 4 tbsp Cooking cream
- 2 big pinches Coarse sea salt from the mill
- 2 big pinches Colorful pepper from the mill
- 1 big pinch Grated nutmeg
Serve:
- 2 Discs Lemon
- 2 Radish
Neck chop:
- Wash the neck chops, pat dry with kitchen paper, steak with the meat tenderizer, season well on both sides with coarse sea salt from the mill and colored pepper from the mill. Beat the egg and whisk with the cooking cream (1 tbsp). First turn the neck chops in flour, pull them through the egg mixture and roll them in breadcrumbs. Heat sunflower oil (6 tbsp) in a pan and fry the prepared neck chops until golden brown on both sides. Shake the pan again and again and drizzle the frying liquid over the chops. Keep the chops warm in the oven at 50 ° C until serving. Whisk the rest of the breadcrumbs with the cooking cream (2 tbsp), place in the frying pan, stir-fry with the whisk until crumbly and season with coarse sea salt from the mill (1 big pinch).
Asparagus:
- Peel the asparagus, cut off the woody ends and cook in salted water (1 teaspoon salt) with sugar (1 teaspoon sugar), butter (1 tbsp) and lemon (1 piece) for about 10 minutes, remove and cook in the oven at 550 Keep warm until serving.
Mashed potatoes:
- Peel, wash and dice the potatoes and cook in salted water (1 teaspoon salt) with turmeric (1 teaspoon) for about 20 minutes, drain and return to the hot pot. Work through well with the potato masher with butter (1 tbsp), cooking cream (4 tbsp), coarse sea salt from the mill (2 big pinches), colored pepper from the mill (3 big pinches) and grated nutmeg (1 big pinch).
