Nectarine tofu burger

Ingredients for 2 servings:

  • 4 burger buns
  • 2 nectarines
  • 300 g tofu, natural
  • 4 tomatoes (mini Roma tomatoes)
  • 8 chicory leaves
  • 4 tbsp ketchup, hot
  • 4 pinches red curry paste
  • 8 slice(s) goat cheese, rolled
  • some vegetable oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Vegetarian

Cut a burger bun in half and toast it. Spread a little ketchup on the underside of the bun. Spread a little curry paste on the top. (Caution: it’s spicy.) Slice the mini Roma tomatoes. Top the underside of the bun with tomatoes. Place two chicory leaves on the tomatoes. Slice the nectarine. Top the top of the bun with nectarine slices. Cut the tofu block into 4 equal-thick slices. Fry one side of the tofu slice in a little vegetable oil. Turn the tofu slice over and top with 2 slices of goat cheese. When the tofu slice is cooked through, carefully place it on the chicory and close the burger.
