  • 1 stalk(s) leek
  • 3 nectarines, not too ripe
  • 300 ml coconut milk
  • Salt
  • chili flakes
  • Curry powder (Thai)
  • Ginger powder
  • Clarified butter

Instructions

Wash the leek and halve it lengthwise. Cut into slightly thicker rings. Wash the nectarines, halve them, remove the stones, and finely dice them. Heat a little clarified butter in a saucepan. Sauté the leek rings for about 3 minutes. Reduce the heat, pour in the coconut milk, and add the diced nectarines. Season to taste with plenty of Thai curry, a little salt, chili, and ginger. Serve after 10 minutes of simmering. The Asian flavor of this side dish goes well with meat, such as chicken or lamb, or can also be used as a sauce for rice. The specified amount is enough as a side dish for 4 people.
