Cheese skewers with dried tomatoes and basil

Ingredients for 20 servings:

  • 500 g cheese (Gouda), young or medium-aged
  • 1 jar of tomatoes, dried, pickled in herb oil
  • basil

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Cut the cheese into approximately 2 cm cubes, place them in a bowl, and toss with the oil from the sun-dried tomatoes. Let it sit for a while. Meanwhile, cut the tomatoes into smaller pieces or halve them, as they would otherwise be too large for the cheese cube. Then top each cheese cube with a fresh basil leaf and place a tomato slice on top. Secure with a toothpick. There are certainly more visually appealing skewers, but they are delicious. Another nice variation is to use mozzarella balls instead of Gouda.
