Ingredients for 2 servings:
- 1 onion(s)
- 1 zucchini
- 3 carrots
- ¼ liter vegetable broth
- 1 tbsp tomato paste
- some salt and pepper
- some oil
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
as a side dish or as a sauce for pasta
Roughly chop the onion and sauté it in a pan with oil. Chop the zucchini and carrots into bite-sized pieces and add them to the pan. Season with salt and pepper and fry briefly. Pour the vegetable stock over the onion, bring to a boil, and then stir in the tomato paste. Simmer for a few minutes. Perfect with pasta and rice.
