Ingredients for 4 servings:
- 150 g wild garlic
- 200 g nettles, the young leaves
- 500 g potatoes
- 30 g butter
- 1 onion(s)
- 250 ml cream
- 1 egg(s)
- 3 tbsp cheese, grated
- salt and pepper
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Let the nettles sit for a few hours. Clean and wash the wild garlic and nettles, blanch them briefly in boiling water, and chop them finely. Melt the butter in a pan, sauté the finely chopped onions for 10 minutes, but do not roast them. Add the cooked and sliced potatoes, then the wild garlic and nettle leaves, and sauté briefly. Season with salt and pepper and remove from the heat. Mix the cream and egg together and season with a little salt. Butter a gratin dish. Layer the vegetable mixture and cream sauce in the dish and sprinkle with the cheese. Bake in a preheated oven at 200°C for about 15 minutes. Serve with green sauce or green leaf salad.
