  • 200 g nettles, the young leaves
  • 500 g potatoes
  • 30 g butter
  • 1 onion(s)
  • 250 ml cream
  • 1 egg(s)
  • 3 tbsp cheese, grated
  • salt and pepper

Let the nettles sit for a few hours. Clean and wash the wild garlic and nettles, blanch them briefly in boiling water, and chop them finely. Melt the butter in a pan, sauté the finely chopped onions for 10 minutes, but do not roast them. Add the cooked and sliced ​​potatoes, then the wild garlic and nettle leaves, and sauté briefly. Season with salt and pepper and remove from the heat. Mix the cream and egg together and season with a little salt. Butter a gratin dish. Layer the vegetable mixture and cream sauce in the dish and sprinkle with the cheese. Bake in a preheated oven at 200°C for about 15 minutes. Serve with green sauce or green leaf salad.
