Ingredients for 4 servings:
- 2 handfuls of nettle leaves, fresh
- 2 potatoes
- 1 onion(s)
- 500 ml vegetable stock
- 100 ml cream or vegan cream substitute
- salt and pepper
- some oil

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Wash the nettle leaves, drain, and roughly chop. Peel and dice the potatoes. Peel and finely dice the onion. Fry the diced onion in oil until translucent. Then add the nettles and roast briefly. Then add the potatoes and pour in the vegetable stock. Season with salt and pepper. Simmer gently for about 20 minutes, until the potatoes are tender. Now add the cream and blend everything thoroughly with a hand blender. Season to taste and serve.
