Ingredients for 4 servings:

  • 1 kg nettles, young leaves, washed
  • 1 small onion(s), peeled and finely diced
  • 125 ml cream
  • 50 g butter
  • 50 g flour
  • some salt
  • some black pepper, ground
  • some nutmeg, grated

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Rhenish specialty

Cook the nettles in a little boiling water until soft, drain (reserving some of the water), and finely chop. Blanch the onion in the butter, add the flour, then add the cream and a little of the stock, stirring constantly, until a creamy sauce forms. Stir in the nettles and season with salt, pepper, and nutmeg. Serve with fried eggs and mashed potatoes.
