Ingredients for 2 servings:
- 500 g nettle leaves
- 1 onion(s), white
- ½ garlic clove(s)
- 300 g rice noodles
- chives
- ¼ cup cream substitute
- Water, hot
- Egg substitute powder
Instructions

Sauté the onion and garlic in olive oil in a wok. Wash the nettles, add them, and sauté. Deglaze with vegan whipped cream and continue sautéing. Meanwhile, mix the egg substitute powder and pour it over the nettles. Cook rectangular rice noodles from an Asian store in hot water according to the package instructions. Then add some of the pasta water and the cooked rice noodles to the nettles and mix everything together. Note: When collecting nettles, make sure to only pick the top two leaves. Fresh leaves are most effective.
