Ingredients for 2 servings:

  • 750 g potatoes (early potatoes)
  • 1 onion(s), chopped
  • ¼ liter vegetable broth
  • 2 egg yolks
  • 3 tbsp vinegar (apple cider vinegar)
  • 10 radishes
  • 1 bunch arugula
  • oil
  • 1 tsp sugar

Peel and wash the new potatoes, and slice them thinly. Sauté the chopped onion in 1 tablespoon of oil, pour in 1/4 cup vegetable stock, and bring to a boil. Add the potatoes, cover, and simmer for 10 minutes. Whisk the egg yolk with salt, pepper, sugar, and apple cider vinegar. Remove the potatoes from the heat. Stir in the egg yolk mixture, season to taste, and let cool. Finely chop the radishes and arugula and stir into the potatoes.
