Ingredients for 1 servings:

  • 200 ml milk, warm
  • 200 g sugar
  • 2 points yeast (brewer’s yeast, regular yeast works too)
  • some lemon(s) – zest, grated
  • 1 kg flour, maybe a little less
  • 150 g butter, melted
  • 4 eggs
  • 1 egg(s)
  • 1 tsp salt
  • Sesame or almond flakes

Instructions

Working time approx. 40 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 40 minutes

Dissolve the yeast in the warm milk and add 500g, whisking until the mixture is smooth. Cover and keep warm for about 1 hour. Place a bowl over a pan of very hot water and whisk together the eggs, salt, sugar, and lemon zest, then mix in the remaining flour. Mix everything together until the dough is smooth, gradually adding the melted butter. Cover with a cloth and let it double in size in a warm place, which takes about 2 hours. Mix the dough again and place it in a buttered 30cm round pan. Brush with egg and sprinkle with sesame seeds or almond flakes. Bake in the oven at moderate heat for about 45 minutes. When the cake has cooled, make an incision in the bottom and insert a coin. The person who receives the coin will have good luck throughout the year.
