Next Vitamin Bomb with Zucchini, Tomatoes and Feta Cheese

- 500 g Zucchini fresh
- 180 g Diced feta
- 10 Cherry tomatoes red
- 3 tbsp Extra virgin olive oil
- 4 tbsp Bianco balsamic vinegar
- 2 tsp Honey liquid
- Chopped basil
- Salt and pepper
- Wash the zucchini and tomatoes and dry them with a kitchen towel.
- Cut the zucchini into fine strips and brown on both sides in hot oil, remove and allow to cool. Fry in portions as the slices should not be on top of each other.
- In the meantime, quarter the cherry tomatoes lengthways and dice the feta cheese.
- Finely chop the basil leaves.
- Prepare the marinade with the oil, vinegar, honey, salt and pepper.
- When the zucchini have cooled down well, add the tomatoes and feta cheese and mix well. Pour the marinade over it and fold in the basil.
- Now arrange on plates and decorate with basil. It just tastes good with fresh baguette or, as with us, chicken wings or cold meatballs.
