Zucchini – Spaghetti with Cream Cheese and Tomatoes

Ingredients
 

  • 1 medium sized Zucchini
  • 8 Cocktail tomatoes
  • 2 Onions
  • 3 Garlic cloves
  • 1 tbsp Olive oil
  • 2 tbsp Cream cheese
  • 1 tbsp Ajvar
  • Salt pepper
  • 1 tbsp Go basil frozen
  • 1 tbsp Grated Parmesan cheese

Instructions
 

  • Use a spiral cutter to make the zucchini into a spaghetti shape.
  • Cut the tomatoes into cubes.
  • Cut the onions into thin slices.
  • Chop the garlic.
  • Heat the oil in a pan and fry the onions and garlic for 2 minutes.
  • Now stir in the cream cheese and ajvar.
  • Zucchini - Fold the spaghetti into the sauce.
  • Approx. Sauté for 3 - 5 minutes and season with salt and pepper.
  • Now fold in the tomato cubes and serve the zucchini - spaghetti with basil and Parmesan.
  • We had salmon on the side.
