Ingredients for 1 servings:
- 500 g flour
- 20 g yeast, or 1 sachet of dry yeast
- 8 tbsp water, lukewarm
- 350 ml water, lukewarm
- 15 g sea salt
- 50 ml olive oil
- 100 g olives, pitted and chopped
- Butter, for the mold
- Flour , for the shape

Working time approx. 1 hour 45 minutes; Rest time approx. 50 minutes; Cooking/baking time approx. 1 hour 5 minutes; Total time approx. 3 hours 40 minutes

Sift the flour into a bowl, make a small well in the center, and crumble in the yeast. Fill with 8 tablespoons of lukewarm water and dissolve the yeast. Add the olive oil, olives, salt, and about 350 ml of water, and mix all ingredients until a soft dough forms. Cover and let rise in a warm place for about 30 minutes. In the meantime, grease a loaf or bread pan with butter and dust with flour. Preheat the oven to 200 degrees Celsius. Briefly knead the dough again, pour it into the pan, and let it rise for another 20 minutes in a warm place. Make sure the pan is only filled to about 1 cm below the top rim. Then bake the bread. After about 15 minutes, reduce the heat to 180 degrees Celsius and bake for another 40 minutes. Turn the bread out of the pan and bake upside down for another 10 minutes. If you like, you can replace the olives with chopped walnuts. This tastes delicious too. Goes perfectly with grilled meat, tapas, antipasti, etc.
