Nic's Leftover Gyros Metaxa

Ingredients for 2 servings:

  • 2 portions of gyro meat, leftovers from the day before
  • 3 tbsp Metaxa
  • 2 corners of spreadable cheese (cream cheese)
  • 200 ml cream
  • n. B. Grated cheese for sprinkling, e.g. Gouda
  • 1 tsp garlic, chopped
  • e.g. salt and pepper
  • 1 tbsp, heaped tomato paste

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

When gyros is left over from the Greek

Sear the gyros from the night before. Reduce the heat and add the tomato paste, then deglaze with Metaxa. Let it simmer briefly. Add the cream and cream cheese wedges. Toss everything together briefly and transfer to a suitably sized casserole dish. Sprinkle with grated cheese and bake in the oven at 200°C (400°F) for about 10 minutes until golden brown. Serve with fresh baguette.
