Zurich Schnitzel with Mushrooms and Vegetarian Schnitzel

- 100 g Soy Schnetzel dry product
- 0,5 piece Fresh onion
- 200 g Mushrooms
- 1 tbsp Flour
- 1 Cup Broth
- 100 ml Cream
- Salt
- Black pepper from the mill
- 350 g Rice
- Mix the soy shreds with 1 tbsp of stock and pour hot water over them. Let it soak for 10 minutes. Chop the onion. Drain the Schnetzel with a sieve, collect the broth. If less than a cup of broth, add water. Cook rice as specified.
- Fry the cutlets with mushrooms and onion in a pan. After the Schnetzel is lightly seared, dust the flour over the mixture and pour the broth and cream on top. Simmer gently and season with salt and pepper.
