Ingredients for 3 servings:

  • 300 g nettles, young leaves
  • 200 ml water
  • 30 g butter
  • 2 tbsp flour
  • 1 liter of milk
  • salt and pepper
  • Sugar
  • 2 eggs, hard-boiled

Working time approx. 20 minutes; Total time approx. 20 minutes

Finnish nettle soup

Wash the nettle leaves, blanch them in boiling water for 5 minutes, drain, and finely chop. Melt the butter in a saucepan and sauté the flour in it, then deglaze with a little milk. Gradually add all the milk while stirring. Add the nettle leaves and simmer the soup for about 10 minutes. Season with salt, pepper, and sugar, and serve with half hard-boiled eggs. Tip: Use meat broth instead of milk and refine with a little cream.
