Noodles with lamb

Ingredients for 4 servings:

  • 750 g tomatoes
  • 1 bell pepper(s), orange
  • 1 onion(s)
  • 3 garlic cloves
  • 4 tbsp olive oil
  • salt and pepper
  • 500 g lamb fillet(s)
  • 450 g pasta
  • 1 tsp thyme, dried
  • 150 ml red wine

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel, deseed, and dice the tomatoes. Trim and dice the bell peppers. Finely chop the garlic and onion. Thinly slice the lamb fillet and sear briefly and vigorously in 2 tablespoons of oil. Season with salt and pepper and set aside. Fry the bell peppers, onions, and garlic in the remaining oil for about 4 minutes. Season. Add the thyme and tomatoes and continue cooking for about 4 minutes. Add the seared lamb and wine and simmer over low heat for 3-4 minutes. Stir in the pasta, cooked according to the package instructions, and serve.
