Pour boiling water over the fruit tea, let it steep for 5 minutes, and then strain into a saucepan. Peel and core the apples, cut them into thin slices, and add them to the tea. Peel the oranges, remove the white pith, cut the flesh into small pieces, and add them to the tea. Squeeze the lime and add the juice. Add the rock sugar, cloves, and cinnamon stick. Bring to a boil, then let it steep for another 5 minutes. Meanwhile, whip the cream until stiff peaks form. Stir the Calvados into the tea mixture.
