Norwegian crab soup

Ingredients for 4 servings:

  • 1 onion(s), diced
  • 2 carrots, diced
  • 400 g potatoes, diced
  • 1 leek(s), in rings
  • 2 tbsp butter
  • 125 ml dry white wine
  • 400 ml fish stock
  • 1 tbsp spice mix (soup seasoning), dried
  • 250 g crabs, cooked
  • Lemon pepper
  • Salt
  • curry powder
  • 1 tsp dill, dried
  • 200 ml cream

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Melt the butter in a saucepan, add the vegetables, and sauté briefly. Deglaze with white wine, fish stock, and 400 ml water, add the soup seasoning, and simmer for about 20 minutes. Wash the crabs, pat dry, and mix with lemon pepper and salt. Purée the soup and season with salt, curry, and dill. Add the crabs and heat until hot. Whisk the cream gently and carefully fold it into the soup.
