Norwegian salmon with potatoes and Brussels sprouts

Ingredients for 4 servings:

  • 500 g Brussels sprouts
  • 1 large onion(s)
  • 1 apple
  • 3 tsp French coarse-grain mustard
  • 100 g cream
  • 3 potatoes
  • 4 salmon fillets (125 g each)
  • 70 g butter

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Halve the Brussels sprouts and cook in boiling salted water until half cooked, then remove from the water. Peel and finely chop the onion. Wash and finely dice the apple. Sauté both in hot oil. Add the Brussels sprouts and stir in the cream, then the mustard, and sauté until tender. Peel the potatoes and cut into very thin slices. Cook in the Brussels sprouts water until tender, then drain the water. Wash the salmon, pat dry, and salt and pepper them. Fry the salmon in hot oil for a few minutes on both sides. Meanwhile, melt the butter. Arrange the Brussels sprouts and sauce on plates. Place the salmon fillets on top, top with potato slices, and drizzle with melted butter.
