Ingredients for 8 servings:

  • 5 egg yolks
  • 125 g sugar
  • 400 ml milk
  • 125 ml cream
  • 75 g nougat
  • 3 tbsp Amaretto

Instructions

Working time approx. 10 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 20 minutes; Total time approx. 12 hours 30 minutes

Whisk the egg yolks with the sugar until frothy. Bring the milk and cream to a simmer, then dissolve the nougat in it. Stir the hot mixture into the egg yolk mixture and heat over a simmering water bath to 80°C (stir until rose-like). Stir until cold and refrigerate overnight. The next day, flavor with Amaretto and freeze in an ice cream maker. Let it harden in the freezer. Chill in the refrigerator for 30 minutes before serving.
