Nougat Thyme Ice Cream with Pear Cakes

The perfect nougat thyme ice cream with pear cakes recipe with a picture and simple step-by-step instructions.

Nougat thyme ice cream:

  • 250 ml Milk
  • 250 ml Cream
  • 20 g Sugar
  • 3 Pc. Egg yolk
  • 60 g Nougat
  • 2 tbsp Thyme

Pear cakes:

  • 2 Pc. Pears
  • 50 g Sugar
  • 1 Pc. Freshly squeezed lemon juice
  • 0,25 tsp Cinammon
  • 4 Pc. Puff pastry slices

Nougat thyme ice cream:

  1. Bring the milk and cream to the boil with sugar. Beat the egg yolks in a water bath, slowly add the milk mixture and beat until the rose. Then dissolve the nougat in it. Take off the water bath and stir in the ice water until cold. Add the chopped thyme. Let the mixture become ice cream in an ice cream maker.

Pear cakes:

  1. Mix the lemon juice with the sugar and cinnamon. Cut the pears into thin slices and let them steep in the mixed marinade. Spread the pears on the puff pastry, leaving the edge free so that it can rise better until crispy. Bake for about 16 minutes at 200 degrees. Serve the hot cakes with ice.
