Ingredients for 1 servings:

  • ¼ liter of water
  • 1 pinch of salt
  • 25 g powdered sugar
  • 50 g butter
  • 25 g cornstarch
  • 1 lemon peel, grated
  • 125 g flour
  • 4 eggs
  • Coconut oil for frying, approx. 2 kg
  • 50 g cinnamon sugar for sprinkling

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Bring water to a boil with salt, sugar, and fat. Remove from the heat. All at once, stir in the flour mixed with cornstarch and lemon zest. Stir the mixture until a ball forms and a milky skin forms on the bottom. Place the dough in a bowl. Immediately stir in 1 egg. Then stir in the remaining eggs, one at a time. Heat the fat to 180°C. Using 2 teaspoons, dipped in hot water every now and then, scoop out small balls of dough. Place 4 balls at a time into the hot fat. Fry for 3 minutes until crispy brown all over. Remove with a slotted spoon. Drain on kitchen paper and sprinkle with sugar and cinnamon while still hot. This quantity makes approximately 28 balls.
