Nut and Marzipan Braid

Ingredients
 

  • Dough:
  • 400 g Flour
  • 60 g Butter
  • 1 Egg
  • 0,5 tsp Salt
  • 170 ml Milk lukewarm
  • 40 g Sugar
  • 0,5 cube Yeast
  • Filling:
  • 100 g Ground hazelnuts
  • 40 g Breadcrumbs
  • 50 g Sugar
  • 0,5 tsp Cinammon
  • 180 ml Milk
  • 30 g Marzipan raw mass
  • 4 drops Bitter Almond Flavoring
  • Cream to spread
  • Powdered sugar and water

Instructions
 

  • Heat the milk and dissolve the sugar and yeast in it.
  • Put the flour, butter, salt and egg in a bowl. Add the yeast milk and knead everything together until you have a smooth dough. Let the dough rise for about 60 minutes, then make the filling.
  • Mix the hazelnuts, breadcrumbs, sugar and cinnamon in a bowl. Put the milk, marzipan and bitter almond flavor in a saucepan and bring to the boil while stirring until the marzipan has dissolved. Add the milk to the nut mixture, stir everything together and then allow to cool. If the mass is too firm, add a little more milk, it should be spreadable.
  • Roll out the dough on a floured work surface into a rectangle 40x50 cm. Spread the nut filling on top and cut the dough in half. Roll up each half of the dough starting from the middle. Twist both parts together like a braid and place on a tray. Let rise for 30 minutes.
  • Preheat the oven to 175 °. Brush the braid with cream and bake for 35 minutes.
  • Let the braid cool down a bit. Mix powdered sugar with lemon juice or water and brush the braid with it.
