Nut Cake with Cottage Cheese

The perfect nut cake with cottage cheese recipe with a picture and simple step-by-step instructions.

  • For the dough:
  • 125 g Soft butter
  • 125 g Sugar
  • 1 packet Vanilla sugar
  • 200 g Ground hazelnuts
  • 2 Free range eggs
  • 125 g Flour
  • 0,5 packet Baking powder
  • For the filling:
  • 500 g Quark lean
  • 3 Free range eggs
  • 2 packet Vanilla pudding
  • 250 g Sugar
  • Almond flakes
  • Powdered sugar
  1. Beat the softened butter, sugar and vanilla sugar in a mixing bowl until creamy. Stir in the eggs. Add the hazelnuts and stir in. Mix the flour with the baking powder, add and stir in. Put the dough in the prepared springform pan and smooth it out. Now place the springform pan in the oven preheated to 180 degrees and bake for 15 minutes.
  2. In the meantime, mix the quark, sugar and eggs in a bowl. Finally stir in the vanilla pudding. Take the pre-baked base out of the oven, spread the quark mixture on top and sprinkle with almond flakes. Put the cake back in the oven and bake for another 30-35 minutes at the same temperature.
  3. After baking, take the cake out of the oven and let it cool down in the tin. Place the cooled cake on a cake plate and sprinkle with powdered sugar before serving.
