Nut staler – alternative to nut roast – delicious and vegetarian

Ingredients for 4 servings:

  • 200 g mixed nuts
  • 1 onion(s)
  • 50 ml coconut milk or cream, as desired
  • 1 egg(s)
  • 2 tbsp balsamic vinegar
  • 1 tsp, leveled garden herbs to taste
  • 60 g hard cheese, grated (Grana Padano or Parmesan)
  • 1 pinch(s) paprika powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Vegetarian main course or cold with salad

Preheat the oven to 170°C (top/bottom heat). Roast the nuts in a pan or in the oven without oil, then set aside. Dice the onion and fry in a little fat, then set aside. Whisk the cream, egg, and balsamic vinegar with a hand mixer and stir in the herbs, onion, and cheese, then mix in the nuts. You can play around with the seasoning; I recently added a pinch of Cajun seasoning, which I liked. Using a tablespoon, place 8 heaping spoons on a baking sheet lined with baking paper and bake for about 20 minutes. They’re done when they have a nice golden brown. They shouldn’t be too dry. I adapted this recipe from various nut roast recipes; I really like the pure nut flavor. It goes well with almost any vegetable and filling side dishes like potatoes in any form, risotto, and much more. It’s also delicious cold with a salad. The amount may seem small at first glance, but the nuts are very filling, and I find two pieces per person more than enough. I wish you good luck and hope your meal is a treat.
