Working time approx. 35 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour
typical English cookie, as described by Mary Berry herself
It’s best to preheat the oven to 180°C right from the start. Then, put the butter and sugar in a mixing bowl and mix until creamy. In another bowl, beat an egg and mix it with the vanilla extract and milk. Then add this to the butter and sugar mixture. Finally, add the flour, baking powder, raisins, and oats and mix well one last time. The baking sheet should be very well greased before placing the raw mixture on it, tablespoon by tablespoon. The total mixture yields about 30 cookies. I need about 2 trays for this, as the cookies spread a lot! The baking time is between 12 and 15 minutes, although this depends on the oven. Be extremely careful: as soon as the cookies start to darken around the outer edges, they should be removed from the oven, otherwise they will become very dry and brittle. After baking, remove the cookies from the oven and let them rest on the baking sheet for about 5-10 minutes to firm up. Then, uncover them and let them cool completely. The cookies will keep in a Tupperware container for about 5 days.
