Ingredients for 1 servings:

  • 200 g oat flakes
  • 250 g sugar
  • 200 ml whipped cream
  • 50 g butter
  • 1 egg(s)
  • 1 lemon(s) – zest, grated
  • 280 g flour, wheat flour
  • 1 tbsp baking powder
  • 1 egg yolk, for brushing

Mix the oats and sugar in a bowl, pour the cream over them, stir thoroughly, and cover with foil to let them swell overnight. The next day, cream the butter until fluffy. Whisk the egg. Stir both ingredients into the swollen oats. Knead in the lemon zest, flour, and baking powder. Cover the dough and let it rest for half an hour, then roll it out thinly on a floured surface. Cut out cookies in any shape you like, place them on a baking sheet lined with baking paper, brush with egg yolk, and bake in a preheated oven at 200°C for 10-12 minutes until golden brown.
