Ingredients for 1 servings:

  • 250 g quark
  • 250 g oat bran
  • 2 eggs
  • ½ pack of baking powder
  • 1 pinch of salt
  • ½ tsp bread spice mix
  • Almond(s)
  • kernels
  • Plum(s)
  • Cinnamon powder
  • Nuts
  • Dried fruits

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Low-carb flatbread with oats and quark, ready in 20 minutes

The flatbread can be prepared in two ways: savory or sweet. Mix all ingredients in a bowl until a slightly moist and sticky dough forms. Variations: Depending on your taste, you can knead almonds or seeds into the dough. For a sweet version, you can add cinnamon, prunes, nuts, or dried fruit. Be a little less generous with the bread spice. Spread the dough about 2 cm high on a baking tray lined with baking paper. This works best with your hands. Don’t be alarmed if the dough seems very sticky; that’s normal. Small rolls can also be formed from the dough. Preheat the oven to 180°C. Bake the flatbread for about 15-20 minutes. The flatbread can be eaten warm straight from the oven. The dough is nice and crispy on the outside and light on the inside. Even a few days later, the flatbread will still be light and airy.
