Oatcakes with fruit salad

Ingredients for 2 servings:

  • 1 egg(s)
  • 1 tbsp sugar
  • 50 ml mineral water
  • 75 g low-fat yogurt
  • 50 g flour
  • 30 g oat flakes, flower-soft
  • 1 pear(s)
  • 1 orange(s)
  • 50 g seedless grapes
  • 2 tbsp honey
  • Cinnamon
  • 1 tsp lemon juice
  • 2 tbsp oil or butter

Quick to make, healthy, affordable and delicious!

Separate the egg. Beat the egg yolks and sugar with the whisk of a hand mixer until creamy. Stir in the mineral water and yogurt, then fold in the flour and oats and let the batter rest for about 15 minutes. Peel the pear, quarter it, and remove the core. Cut the flesh into pieces. Peel the orange, cut it into segments, and then cut these into pieces. Rinse the grapes and halve them if desired. Squeeze the lemon. Mix the lemon juice, honey, and cinnamon together and mix with the fruit. Beat the egg whites until stiff peaks and carefully fold into the batter. Heat oil or butter in a pan and add small portions of batter to form cakes about the size of your palm. Bake the cakes until golden brown on both sides and serve with the fruit salad.
