Oatmeal and nut cookies

Ingredients for 1 servings:

  • 30 g cashew nuts
  • 30 g almonds
  • 30 g hazelnuts
  • 100 g butter
  • 1 tsp ginger powder
  • 130 g sugar
  • 1 packet of vanilla sugar
  • 1 egg(s)
  • some salt
  • 1 tsp, leveled baking soda
  • 80 g wheat flour
  • 50 g wholemeal flour
  • 125 g oat flakes
  • some milk

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Preheat the oven to 180°C (top/bottom heat). Chop the cashews, almonds, and hazelnuts into small pieces, e.g., in a Thermomix. Combine the butter with the ginger, sugar, vanilla sugar, and egg. Combine both flours with salt and baking soda and add to the remaining mixture. Also add the nut mixture, milk, and oats. Form small balls, place them on a baking sheet lined with baking paper, and flatten with the palm of your hand. Bake in the oven for about 15 minutes. Let cool. If desired, you can cover them with chocolate glaze.
