Ingredients for 1 servings:

  • 4 tbsp oil (nut oil or rapeseed oil)
  • 125 g oat flakes, whole grain (small leaf)
  • 1 egg(s)
  • 70 g sugar
  • 1 packet of vanilla sugar
  • 50 g flour (wholemeal flour if needed)
  • 1 tsp, leveled baking powder
  • 1 pinch of cinnamon
  • 50 g raisins

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Crispy, airy, light and quite healthy biscuits, makes about 25 biscuits

Preheat the oven to 180°C. Heat a non-stick pan, add oil, and toast the oats until lightly golden brown, stirring constantly. Add 1 tablespoon of the sugar and caramelize until lightly golden brown. Allow to cool. Beat the egg with the remaining sugar and vanilla sugar until fluffy and creamy. Then stir in the flour, baking powder, and cinnamon. Fold in the oats and raisins. Using teaspoons, place about 25 small heaping spoons onto a baking sheet lined with baking paper and lightly shape into flat, round cookies. Bake in the preheated oven at 180°C (top/bottom heat) for about 15 minutes until golden brown. They will spread slightly and become nice and big and thick. Be careful not to overcook them, or the raisins will taste burnt! Allow to cool completely on a wire rack.
