Ingredients for 4 servings:

  • 100 g flour (whole wheat flour)
  • 150 ml milk, possibly low-fat
  • Salt
  • Nutmeg, grated
  • ½ tsp curry powder
  • 1 egg(s)
  • 150 g carrot(s), finely grated
  • 100 g celeriac, finely grated
  • 100 g leek, cut into very fine strips
  • 30 g onion(s), finely diced
  • 250 g yogurt, possibly low-fat
  • 2 tsp mustard, medium hot
  • 1 tbsp lemon juice
  • 1 tsp honey
  • Salt
  • pepper
  • 4 tbsp wild garlic leaves, chopped (alternatively chives, arugula or 2 cloves of garlic)
  • possibly grease for the waffle iron

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

with yogurt sauce

Combine whole wheat flour with milk, salt, nutmeg, curry powder, and egg. Let it sit for about 30 minutes. Meanwhile, prepare the vegetables and then mix them into the batter. Spread portions onto a waffle iron (greased, depending on the iron) and bake. For the sauce, combine all ingredients, season to taste, and serve with the hot or cold waffles.
