Ingredients for 1 servings:

  • 3 tbsp margarine
  • ¼ cup fructose
  • 1 egg white
  • Carrot(s), finely grated, 1/3 cup
  • ½ cup flour (whole wheat flour)
  • 1 tsp baking powder
  • ½ tsp mixed spice(s) (e.g. cardamom, cinnamon, cloves, etc.)
  • ½ cup oatmeal
  • 4 tbsp buttermilk
  • Oat flakes, for sprinkling

Working time approx. 20 minutes; Total time approx. 20 minutes

A healthy snack, also great for kids to take to school! Nice and juicy thanks to the carrots

Beat margarine and sugar until fluffy. Add egg whites and beat until creamy. Stir in carrots, flour, baking powder, and spices. Add oats and buttermilk and mix well. Using a tablespoon, place small mounds on a baking sheet lined with parchment paper and sprinkle with a few oats. Bake at 175°C for about 12-15 minutes. If you like, you can also add currants to the batter!
