Oatmeal cookies with peanuts

Ingredients for 1 servings:

  • 150 g flour
  • 200 g brown sugar
  • 80 g oat flakes, wholegrain
  • 200 g peanuts, roasted, without salt
  • 1 egg(s)
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • 25 g ginger root, fresh
  • 1 tbsp milk, optional 2 tbsp
  • 4 tbsp oil
  • Salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat oven to 200-210°C fan/convection oven. Whisk the egg, sugar, and oil until frothy. Then add the oats, flour, and baking powder. Finely chop the ginger and stir in with the remaining ingredients. If the dough is too stiff, add a little more milk. Place small piles on the baking sheet, leaving plenty of space between them, and bake for about 8-10 minutes.
