Ingredients for 1 servings:
- 250 g flour
- 85 g oat flakes
- 1 tbsp baking powder
- ½ tsp cinnamon
- ½ tsp salt
- 85 g raisins
- 2 eggs
- 200 ml milk
- 75 ml vegetable oil
- 50 g sugar (light muscovado sugar)
- 5 tbsp honey, light
- Butter for the mold
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
makes 8 muffins
Preheat the oven to 200°C, gas mark 6 or 180°C fan/convection oven. Butter a muffin tin. In a large bowl, combine the flour, oats, baking powder, cinnamon, salt, and raisins. In a separate bowl, whisk the eggs with the milk, oil, sugar, and honey. Then add this to the flour mixture and stir quickly until completely blended, but do not overmix. The batter should be quite runny. Spoon the batter into the muffin tins and bake for 20 to 25 minutes. Let cool in the tin for a few minutes, then turn out onto a wire rack. Muscovado sugar is available at any world food store.
