Oatmeal macaroons

Spread the love

Ingredients for 1 servings:

  • 70 g butter, soft
  • 2 eggs
  • 250 g sugar
  • 50 g cocoa
  • 250 g oat flakes
  • Cinnamon
  • Wafers, approx. 5 cm diameter
  • 100 g powdered sugar
  • 2 tbsp lemon juice

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Beat the eggs with the butter and sugar until fluffy, then stir in the remaining ingredients. Using two teaspoons, drop small heaps of the mixture onto the wafers. Bake in a preheated oven (155°C fan oven or 175°C top/bottom heat) for about 15-17 minutes. The macarons should still be quite soft and glossy. In the meantime, prepare the icing. Slowly add the lemon juice to the icing sugar until the icing is thick and smooth. Cover the macarons with the icing immediately after baking and let them cool. They will keep in tins for about 3-4 weeks.
