Ingredients for 4 servings:

  • 1 stalk(s) leek
  • 1 small onion(s)
  • 2 carrots
  • 1 liter of water
  • 100 g oat flakes
  • 1 tbsp sour cream

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Finely chop the leeks and onions and fry in a little oil or butter. Add the oats and chopped carrots and mix well. Deglaze with water and season with vegetable stock powder. Simmer gently until the soup is creamy, adding a little more water if it’s too thick. Finally, stir in some sour cream. For an Asian-style twist, you can fry some chopped ginger at the beginning and season with curry powder.
