Old Style Chocolate Quark Stollen

The perfect old style chocolate quark stollen recipe with a picture and simple step-by-step instructions.

  • 500 g Flour
  • 1 packet Baking powder
  • 200 g Sugar
  • 1 packet Vanilla sugar
  • 4 drops Bitter almond flavor
  • 1 tsp Rum
  • 1 tsp Freshly squeezed lemon juice
  • 1 packet Ginger bread spice
  • 3 piece Free range eggs
  • 250 g Lowfat quark
  • 125 g Butter
  • 50 g Raisins
  • 100 g Ground hazelnuts
  • 100 g Chopped almonds
  • 100 g Chocolate grated dark
  • 1 packet Chocolate icing
  1. This is a recipe from my favorite. She has always made quark stollen that way. I was allowed to help this time. I covered the stollen with the chocolate icing and ate a lot of it.
  2. Work the flour, baking powder, sugar, vanilla sugar, bitter almond, rum, lemon juice, gingerbread spice, eggs, butter and quark into a kneading dough.
  3. Gradually knead in the remaining ingredients. If the dough sticks, chill it for a moment.
  4. Shape the dough into a stollen and place on a baking sheet (underlay with baking paper). Bake at 175 degrees for about 75 minutes.
  5. Brush the cooled stollen with the chocolate icing.
  6. If you don’t like the chocolate icing, you can dust the stollen with powdered sugar. I really like quark stollen and stollen in general. But there must be no lemon peel and orange peel in it. But that’s a matter of taste, like everything.
