Ingredients for 3 servings:
- 500g spaghetti
- 1 bunch of spring onions, or 2-3 leeks
- ½ cup olive oil
- 5 tbsp Maggi (liquid)
- 1 pinch(s) pepper, freshly ground
- Salt

Working time approx. 20 minutes; Rest time approx. 5 hours; Total time approx. 5 hours 20 minutes
Wash the bunch of spring onions or leeks and then cut into small rings. Put water on for the noodles (only add the salt when the water is boiling, otherwise the noodles can take on a slightly bitter taste) and only cook the noodles until al dente, as they will continue to cook later. If the noodles are cooked too soft, they will be overcooked. After the noodles are cooked, refresh them in ice-cold water until they are really cold. Don’t worry if the noodles become stiff – they will pass. Now put the olive oil, Maggi, noodles and spring onions in a suitable bowl. Mix everything well and season with pepper. Please don’t be irritated if it tastes a little spicier at first. Cover the bowl and stir gently every hour. After the noodles have soaked for at least 5 hours, season again and add more Maggi if necessary. The salad tastes best if you let it soak overnight.
