Ham stew with sauerkraut

Ingredients for 4 servings:

  • 1 ½ kg meat (ham hock)
  • 2 bay leaves
  • 5 juniper berries
  • 3 carnations
  • 1 kg sauerkraut, fresh
  • 5 juniper berries
  • 5 peppercorns
  • 3 carnations
  • 2 bay leaves
  • 1 tsp caraway seeds
  • 1 large onion(s)
  • 2 tbsp lard
  • Wine, apple or white wine
  • 1 slice(s) bacon, streaky bacon, smoked

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

hearty winter food

Wash the meat and place it in a large pot of boiling water with the spices. Cook for 1/2 hour. Remove the meat. Discard the cooking water and brown the onion wedges and bacon in the pot with the lard. Add the cabbage and spices and pour in 1/2 liter of apple or white wine. Place the meat on top and cook in the covered pot for about 1 hour. Add caraway seeds to taste. This is usually served with mashed potatoes or boiled potatoes.
