Ingredients for 1 servings:
- 2 slices of bread
- 1 chicken breast fillet(s)
- 1 avocado(s)
- 2 eggs
- 1 pinch(s) paprika powder
- 1 pinch of garlic spice
- 1 pinch(s) chicken seasoning
- 3 pinches of salt
- 3 pinches of pepper
- 1 onion(s), finely chopped (or frozen onion cubes)
- 6 cherry tomatoes
- oil
- Margarine, salted
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Toast the bread slices to your liking and set aside. Season the chicken breast fillet with paprika and roast chicken seasoning (salt and pepper to taste) and fry in a pan until juicy. Meanwhile, halve the avocado, remove the pit, and cut the flesh into small pieces. Season with garlic seasoning, salt, and pepper, and mash until creamy. Halve the cherry tomatoes and add them to the pan along with the onion. Fry until smooth. In a separate bowl, break the eggs and season with salt and pepper. Add the egg mixture to the pan with the cherry tomatoes and stir to make a moist scrambled egg. Set the pan to medium heat. Spread the toasted bread slices with salted margarine and generously spread with the prepared avocado spread. Halve the cooked chicken breast fillet, place it on the avocado spread, and top with the freshly prepared scrambled egg.
