Dice the leek and tomato and place them in a bowl with the eggs. Season with rosemary, salt, and pepper and whisk to combine. Carefully pour the mixture into a glass jar, making sure the jar is not damaged. Place in an unheated oven at 200°C for 10-15 minutes. I like to serve this with some whole-grain bread for a healthy and filling breakfast. Approximately 214 kcal per serving.
