Ingredients for 2 servings:

  • 2 eggs
  • some chives in rolls
  • some cherry tomatoes
  • salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 17 minutes

Fluffy, baked eggs that look like clouds

Separate the eggs. Set the egg yolks aside and beat the egg whites until they resemble the consistency of cream. They should no longer runny, but be quite firm. Using a spoon, form two balls from the egg whites on baking paper. Make a dent in the top of each egg white, into which you will later place the egg yolks. Bake the egg whites at 230°C for approximately 5-10 minutes, depending on the desired degree of browning. Place the egg yolks in the dents and bake for a further 2 minutes. Place on a plate and sprinkle with chopped chives. Season with salt and pepper, if desired. Halve the cherry tomatoes and serve.
