Omelette with cheese, tomatoes and basil

Ingredients for 3 servings:

  • 6 eggs
  • 1 shot of milk
  • 3 tbsp Parmesan, grated, or another spicy hard cheese
  • 8 cherry tomatoes
  • ½ bunch basil
  • 2 tbsp butter
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

best for Sunday breakfast, a quick lunch or evening snack

Whisk the eggs and milk with a fork. Add the cheese to the egg mixture and season with salt and pepper. Wash and halve the cherry tomatoes. Wash the basil and shake dry. Finely chop the leaves. Heat a knob of butter in a pan over medium heat. Using a ladle, add 1 ladleful of the egg mixture to the pan and spread it out. Sprinkle four tomato halves and some of the basil on top of the egg mixture. Once the omelet is firm, use a spatula to fold one half over the other and carefully lift it from the pan onto a plate. Make more omelets using the remaining egg mixture.
