Omelette with green asparagus

Ingredients for 4 servings:

  • 2 bunch asparagus, green
  • 4 m.-sized eggs
  • 4 tbsp Parmesan, freshly grated
  • some olive oil
  • Salt
  • pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Asparagus Frittata

Cut the asparagus into bite-sized pieces and sauté them in a pan with olive oil. Whisk the eggs, Parmesan cheese, salt, and pepper into the pan with the asparagus. Flip the omelet over on a plate and serve. It also tastes delicious cold.
