Omelette with zucchini and ham

Ingredients for 1 servings:

  • 3 small eggs
  • ½ m.-sized onion(s)
  • 40 g zucchini, grated
  • 40 g diced ham
  • e.g. salt and pepper
  • n. B. Fresh herbs, e.g. chives, basil, parsley or similar.
  • olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Add a little salt to the zucchini and let it simmer. Peel and dice the onion. Whisk the eggs with a little salt and pepper, along with the chopped herbs. Then squeeze the zucchini thoroughly. First, sauté the onions in a little oil, then add the zucchini. Sauté these briefly as well. Then add the ham cubes. Pour the beaten eggs over the zucchini and immediately turn off the heat. Cover and let simmer until the eggs are set.
